Mr. Lixy and I hardly ever go out on NY's Eve anymore since he's had his CDL with the Hazmat endorsement. One drink and one pull over and I'll be baking a cake with a file in it for him! He just recently had to go get fingerprinted for F.B.I. files and then again for Homeland Security files. YIKES!
But we might test the waters this year, because we haven't seen our bestest friends yet in this holiday season due to Rocky's illness. We have X-mas pressie's for them and we miss the stuffins outta them too!
Here's an extremely easy "finger" food to try if anyone needs to make something for the evening but is short of time.
"Mary's Easy Cheeseball" (my mother-in-law)
3 pks cream cheese...8 oz. each...softened
2 pks. dried beef...finely diced...reserve 1/3 (found in the isle with packaged deli meat)
4-5 scallions...finely chopped...green tops only (may omit or use more if preferred)
1 tsp. garlic salt
1 tsp. Accent® flavor enhancer (optional if not available)
Mix softened cream cheese, dried beef, scallions, garlic salt and Accent in a bowl as if making a meat loaf. Form into a ball instead of a loaf. Roll ball in reserved dried beef. Serve at room temperature with a variety of crackers.
Easy as hell ^^^ but the raves about it will make you the hit of the party!
