fried up real crisp and drippy with sauce. not too hot-hot but zingy-hot...flavorful hot, i mean, not just peppery. lots of bleu and celery too.

A good wing doesn't come in a basket with 10 other ones, IMO. Sorry, never been a fan of hot wings, buffalo wings, or whatever clever wing name a restaurant can devise.

However, a friend of mine was a big wing fan and the head cook at a particular restaurant he would frequent had a special hot sauce mixture he would use because the restaurant's standard 'super hot' mixture was not nearly hot enough for my buddy.

Wings IMO should be deep fried with no breading on them and with buffalo hot wing sauce. The sauce should be made with Franks Red Hot sauce and butter (if my memory serves me right it is 2 parts red hot and one part butter). Breading on wing is just filler to me, spiced up breading is just spicy filler and breading with sauce is soggy filler.
