My standby is marinated grilled veggies.
Marinate summer squash, zucchini, eggplant, onion slices, portabella mushrooms (if you like fungus), parboiled red potatoes, etc. in your fave dressing and grill. My guys usually have a steak with it but It's yummy just as is.

Fry sliced chicken breast in Worcestershire Sauce untill cooked through,
pour in 300 ml of cream and cook till rendered to a sauce.
Add more sauce to taste.
Serve over steamed rice.
Wonderful, but about 2 million calories per serve.

One box Rice-A-Roni, cook as normal, but add a can of chopped chicken or ham, and a splash of tabasco. 20 minutes later.... Fiesta!!

Tonight was Salmon in a "homemade" teriyaki sauce....easy and wonderful if you want the recipe. With it we had Broiled eggplant with flavored miso and a japanese white salad. They work well together, but the teriyaki salmon (or chicken, or whatever) is just as good with steamed green veg.

Last night I made salmon and shimp tacos.
Grill the salmon and shrimp in a tomato pesto with garlic and some fresh pepper. Combine the cooked fih with salsa, cheese, lettuce, onion, and tomatoes on flour tortillas.
I served them with mixed sauteed veggies (broccoli, carrots, and snow peas). They were wonderful!

Mexican lasagne:
Make much the same as normal Italian lasagne, using Sorj bread or similar instead of the pasta sheets, a similar mince to that used for burritos or tacos with salsa, and top it with salsa and cheese

Put a turkey in the oven to slow-cook overnight for today's meal. (Turkey was really cheap during the holidays so we picked up a couple extra).
So the next week we will be having....
Turkey fried rice
Turkey casarole
Turkey burittos
Homemade turkey soup (with those big egg noodles)

Great ideas guys! Thank you so much for the replies! Belial I've had an incredible craving for tacos lately..so I'm thinking maybe this may be my next try out. Thanks!  Keep um commin ya'all. One of my faveorite quickies out of the box things is to make the HBurger Helper type thing on the side of a Velveta Shells N Cheese Box. You brown the burger...then put in some water and the shells...cook untill the shells are soft..then mix in the cheese and like a tablespoon of ketchup. It's yummy and creamy for a quickie.

I'm gonna have the hubby grill some steak. Yes, I know its 28 out and theres snow on the ground. The bbq grill is on the front porch and he's got a warm coat.
Meanwhile back in the warm house, I'm going to cook some shrimp, bake a few potatoes and throw together a tossed salad. And since I'm on a corn meal muffin kick lately, probably make a batch of them.

Tonight was a quick thai curry (scallops and spinach, although it's meant to be shrimp...just wasn't any available yesterday at the store) and mushrooms sizzled in a little garlic and rice wine.
Easy stuff, and v. yummy.

Quickest dinners for me are to just make a nice salad. I have tons of great combos, some with proteins some without, and I make or buy the dressings. Add some fruit and fresh bread.
