The Tonight Show with Johnny Carson
I don't watch Leno so I don't know if they still use the same theme music or not. Doc and the Orchestra were great with that theme though!

I used to love the theme music to a western called Cimmeron Strip. Had a great sound. Also liked the musical theme for The Equalizer.

I always thought the theme tune for Air Wolf was great. I don't think I could even sing it now, but I'd know it if I heard it and I loved it when I was a kid.
Other memorable theme music for me, would be from British shows like Morse and (another favourite when I was a kid) Button Moon.

I've never caught Leno from the beginning to hear what music he uses, but I'm betting he changed that too...he pretty much started from scratch when he took over, acting like the previous 29 years never happened...
Speaking of talk show themes, I always thought Letterman's theme music was a smoking tune, especially the version Paul & The World's Most Dangerous Band used to play during the "Late Night" years at NBC...During one of Bill Murray's many appearances on the show, he got up & sang his own words to the theme song, funny stuff...
