I smiled when I read this and could almost imagine the look on your face as you ate your first brownie. I like to make mine in a cupcake pan with little cupcake papers..that way each individual brownie is perfect, just like you described...a little crunchy on the outside and soft and yummy on the inside! Damn, now I'm gonna have to find some chocolate! lol

It's not that we've never had them before, there's a lovely American style diner here that does the (2nd) best brownies lovely served warm with ice-cream and cream oh and chocolate sauce and........excuse me I need to go nibble a brownie..........mmmmmmmmmmm

375s butter
375g best quality dark chocolate
6 large eggs
1 tablespoon vanilla extract
500g caster sugar
225g plain flour
1 teaspoon salt
300g chopped walnuts
Melt chocolate and butter together in a double boiler.
Beat eggs and sugar together with the vanilla extract.
Allow chocolate mixture to cool a little once melted then beat with the eggs and sugar.
Add the nuts and flour and combine thoroughly.
Pour into a lined baking tin (33 x 23 x 5.5cm) and bake for about 25 minutes at 180 c/ Gas mark 4. They should be cracked and speckly on the surface, but gooey and damp in the centre.
Allow to cool completely before turning them out and cutting them - I didn't and the centre was still too molten to be able to cut properly!
This makes LOADS and my tin was slightly smaller but deeper so I found they took longer in the oven. Also, rather than putting 300g of walnuts, I did 200g and added about 150g of white chocolate chunks.
