My favorite!!
ORANGE GINGERBREAD
1/3 cup canola oil
1 cup dark molasses
1 & ¼ cups orange juice
1 tablespoon finely grated orange rind
2 & ½ cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 teaspoons ground ginger
½ cup raisins
**Preheat oven to 350 degrees. In a large bowl, mix together wet ingredients. In a medium bowl, sift together dry ingredients. Add raisins. Add dry ingredients to wet ingredients and mix well. Pour into a greased 9 by 13 inch pan. Bake 40 minutes, making sure not to over bake. Gingerbread will be moist. Serves 24.
