Slow Cookin'
I bought myself a slow cooker (+ pressure cooker) for Christmas, and I've been having a fun time inventing yummy meals. The only downside is that the house smells so good while the food is cooking that I nearly go nuts.
Does anyone have any favorite slow cooker recipes they'd recommend? |
I have two large slow cookers and just got a "tri-pack" of connectable small ones. I haven't used the little ones yet but will probably do so soon. With one vegetarian in the house, the flexibility to slow cook meat and veggie dishes will help a lot.
I enjoy any kind of stew/casserole dish but the rest of the family doesn't, so we would typically only do some sort of roast or whole chicken. Surprisingly enough, I've yet to make a slow cooked corned beef. I'll have to remember to do that. One of my fave's is kielbasa & sauerkraut. While it's delicious...I have the exact opposite issue of the scent. The whole house smells like cabbage for a week. lol |
Too bad you both don't live closer and offer to host supper. :D

Slow-Cooker Recipe: Classic Beef Stew • 4 pounds bottom round, well trimmed and cut into 2-inch pieces • 1 cup all-purpose flour • 1/3 cup olive oil (plus more if needed) • 2 large onions, diced (2 cups) • 1 6-ounce can tomato paste • 1 cup dry red wine • 1 pound potatoes, cut into 2-inch pieces (about 4 cups) • 1/2 pound baby carrots (about 2 cups) • 2 cups beef broth • 1 tablespoon kosher salt • 1 teaspoon dried thyme leaves • 1 bay leaf • 1 cup frozen peas, thawed Preparation Coat the beef in the flour. Heat a few tablespoons of the oil in a large skillet over medium-high heat. Brown the meat, a few pieces at a time, adding more oil as necessary. Transfer to a 4- to 6-quart slow cooker. Add the onions to the skillet and cook over medium heat until tender, about 10 minutes. Stir in the tomato paste and coat the onions; transfer to the cooker. Pour the wine into the skillet and scrape up any browned bits; add to the cooker. Stir in the potatoes, carrots, broth, salt, thyme, and bay leaf. Cover and cook on low heat for 7 1/2 hours, or on high for 4 hours. Add the peas and heat through. |
My family loves....
SlowCooker BBQ Chicken Drumsticks: lg. tray of chicken drumsticks (usually 12-14 pieces) Your fav BBQ sauce (I use Sweet Baby Rays) Put drumsticks on foil lined cookie sheet. Bake for 45 min. @ 350 just to get color on the skin and partly cook. Place drumsticks in slow cooker, Pouring BBQ sauce over each layer, Making sure to cover all of them, but not so much they float. Cook on low for 4 hours. Very yummy ! Be sure to have plenty of napkins. Good to take it in slow cooker to picnics, potlucks, parties. where ever. |
My mom makes home made spaghetti sauce in her crock pot, but if you look online there are all kinds of recipes for slow cookers. I've been saving recipes for a while now. I even have one for cheese cake done in a slow cooker.

PINTEREST is a veritable wealth of slow cooker recipes! I've made a couple things off there and they've turned out well. One was Honey Sesame Chicken
SLOW COOKER HONEY SESAME CHICKEN Prep Time 10 minutes Cook Time 4 hours Total Time 4 hours, 10 minutes Yield 6 servings Simply throw everything in the crockpot and you're set for a family-friendly meal - it doesn't get easier than that! INGREDIENTS 1 small onion, diced 2 cloves garlic, minced 1/2 cup honey 1/2 cup soy sauce 1/4 cup ketchup 2 tablespoons vegetable oil 1/4 teaspoon crushed red pepper flakes 2 pounds boneless, skinless chicken thighs Kosher salt and freshly ground black pepper, to taste 1 green onion, thinly sliced for garnish Sesame seeds, for garnish INSTRUCTIONS In a large bowl, combine onion, garlic, honey, soy sauce, ketchup, vegetable oil and red pepper. Season chicken thighs with salt and pepper, to taste. Place chicken thighs into a slow cooker. Add honey mixture and gently toss to combine. Cover and cook on low heat for 3 hours and 30 minutes. Remove chicken thighs from the slow cooker and shred the chicken before returning to the pot with the juices. Cover and keep warm for an additional 30 minutes. Serve immediately, garnished with green onions and sesame seeds, if desired. |
I used to do this when I lived down south, in the cooler part of Oz.
I'd cut up and freeze some lean meat and non-potato vegetables, making sure that the frozen shape would fit the crock-pot. Potatoes I'd peel the night before and leave in a bowl of water. Before leaving for work I'd put the frozen stuff and the potato in the pot with salt, pepper and a handful of commercial dried mixed herbs. A half-dozen icecubes give water for cooking. As the pot only had an on and off switch, I could use a timer to set the thing off after a couple of hours. I got pretty got a working out how long was needed for quantities. A small slurp of Worcestershire Sauce at the end and all was wonderful. |

Not pressure cooker, but crock pot, and it still counts as slow cooking:
split pea soup. Made with ham fat, if you can get it. |

My $89 machine from Amazon does both. It also has a Congee button, but I have yet to try it.

One of M's girlfriends had a kind of thermos jug where you place your corned beef and maybe some small onions, fill to the line with boiling water, seal the lid and come back in a few hours for perfect corned beef.
Don't ask me where, when or how, it just some women's magic stuff. |
I always make soups in my crockpot...no muss no fuss....pot roasts are simple too, as is spaghetti sauce.
So many things can be cooked in a crockpot, the possibilites are really endless I have a pressure cooker too but every time I use it, I think it's going to explode lol......always waiting for that kaboom! |
