OMG I'm in love....
 
I made brownies for the first time ever yesterday (yes, I know I'm a little old for having just discovered these, but it's not a traditional British thing remember!)

They are absolutely amazing! And the recipe makes soooo many! They are almost crispy on the outside and wonderfully dense and fudgy in the middle.....mmmmmmmm

When I'm not trying to eat in a more healthy manner ... they are one of my favorite treats ... a bakery here does them with the chocolate frosting and then a drizzle of carmel sauce on top of that .... carmel brownies they call them ... yummmmmm!

You might like to try this!!: Heat a nice 3" square in the microwave and top with your favorite ice cream!! Pour some chocolate syrup on,maybe some nuts,whipped cream...whatever turns you on :) :)

ahh I didn't see any whipped cream like Americans are used to whilst i was over there in the UK...I think the closest is your clotted cream???

For my birthday, i wanted fresh strawberries and whipped cream on angel food cake. Neither Mayhem, nor his family had ever eaten, much less heard of angel food cake. So His mother and i planned even before i came over to see that she had the right ingredients. She lent me her kitchen and i baked the cakes. They seemed to like it well enough :D

What was different about the whipped cream we have in England Lizz? Clotted cream is something completely different...much more dense and solid, whereas whipped cream is lighter and more airy. And then of course there's the nasty sweetened stuff that comes out of a can and dissolves as soon as it hits something warm....

Ah ha! you do have it---i just couldn't find it whilst i was over there. but then it took me 3 or 4 grocery stores to find ranch salad dressing. LOL!

the nasty sweetened stuff from the can, lol, is the kind i was looking for. :D

LOL - it's in every supermarket! usually with the milk and 'proper cream'. To me, whipped cream is thick cream that you take home and whip yourself with a whisk.

YUM....I miss real whipping cream. But alas, it's not on the diet. :(

I smiled when I read this and could almost imagine the look on your face as you ate your first brownie. I like to make mine in a cupcake pan with little cupcake papers..that way each individual brownie is perfect, just like you described...a little crunchy on the outside and soft and yummy on the inside! Damn, now I'm gonna have to find some chocolate! lol

Oh I meant an electric whisk.....although I suppose if you used your own elbow grease, you'd be able to eat more cream because of the calories you'd burned preparing it! :D

Be warned though Lou actually had no dinner last night because she'd been eating brownies ALL day!!

It's not that we've never had them before, there's a lovely American style diner here that does the (2nd) best brownies lovely served warm with ice-cream and cream oh and chocolate sauce and........excuse me I need to go nibble a brownie..........mmmmmmmmmmm

375s butter
375g best quality dark chocolate
6 large eggs
1 tablespoon vanilla extract
500g caster sugar
225g plain flour
1 teaspoon salt
300g chopped walnuts

Melt chocolate and butter together in a double boiler.

Beat eggs and sugar together with the vanilla extract.

Allow chocolate mixture to cool a little once melted then beat with the eggs and sugar.

Add the nuts and flour and combine thoroughly.

Pour into a lined baking tin (33 x 23 x 5.5cm) and bake for about 25 minutes at 180 c/ Gas mark 4. They should be cracked and speckly on the surface, but gooey and damp in the centre.

Allow to cool completely before turning them out and cutting them - I didn't and the centre was still too molten to be able to cut properly!

This makes LOADS and my tin was slightly smaller but deeper so I found they took longer in the oven. Also, rather than putting 300g of walnuts, I did 200g and added about 150g of white chocolate chunks.

I call hand held mixers beaters....I call mixers mixers....i'd love a mix master....i dont have one unfortunately....just me and me beaters

For anyone adding chocolate chips/chunks (white or otherwise) if you toss them in a little bit of flour before you add them to the mix, it will keep them from all sinking to the bottom -- that is true of any baked item that you add them to. :)

Anelectric beater and a mixer are not quite the same thing PF. Am electic beater is hand held where as a mixer sits on a stand.
