There's nothing quite like a salmon steak marinated in lemon and garlic grilled and served on a bed of wild rice.....mmmmmmmmmmmmmmmm

Tiger prawns skewered and marinated in lemon juice, sugar, garlic and a tiny touch of chopped fresh chillis.....done on a really hot, but not flaming grill so the sugar blackens and goes a little caramelised....mmmmm

Or mix tandoori spices with natural yoghurt and smother over skewered chicken, and serve with lemon wedges for squeezing over....perfect hot or cold.

And for desert...

Bananas slit and stuffed with good quality dark chocolate, wrapped in foil and barbecued....serve with a splash of Grand Marnier, or Cointreau and fresh cream.

Hmm....no wonder I'm never going to be a supermodel!!!!

Ribs, Beef roast, Country style ribs, boneless skinless chicken breast, Johnsonville Brats......even hot dogs and hambugers. I love 'em all!!! Luckily I'm not the one that has to do the cooking. :D:D:D

Just prior to going away, I marinaded boneless & skinless chicken breasts in Raspberry Walnut Vinegarette, then grilled them. The key is to dunk them in the marinade when you flip them on the grill. Damn they were great! Plus, it's simple because of using bottled dressing. What took a little more work that same meal was the potatoes. I parboiled new potatoes until slightly tender then cut them in half & tossed them in a mixture of olive oil, red wine vinegar, rosemary, salt, pepper and spicy brown mustard. Once coated, I sprayed the top shelf of the grill with cooking spray and spread out the potatoes. OMG...I must do that again! Not only did I like it...everyone else did too! Now that's a litmus test! :D

It might be easier to get a personal chef. Preferably a tall, balding Irish one. ;)
